The Stockton
Fine-dining Western steakhouse opening in historic Livestock Exchange building at National Western Center. Will feature Colorado-sourced beef (75-80% from in-state ranches), full kitchen, bar, dining room, concrete patio, and repurposed bank vault as wine cellar/dry-aging room. Operated by acclaimed restaurateur Bryan Dayton of Half Eaten Cookie Hospitality.
Chicken Riot
Chicken concept advancing through Denver’s development review pipeline. Building plans approved, tenant finish application submitted for interior renovations including new kitchen equipment. 658 sq ft space with 12 interior seats, projected 70 meals per day with 80% carryout. Proposed hours Wednesday-Sunday 11 AM-7 PM.
Savina’s Mexican Kitchen
Savina’s Mexican Kitchen is expanding to Loveland, moving into the former Pinocchio’s Incredible Italian space. The restaurant serves scratch-made Mexican dishes including chile rellenos, flautas, enchiladas, and mesquite-grilled fajitas, with their hallmark green chile. Also offers weekend brunch service.
Hopscotch Beer Garden
Large outdoor-focused beer garden spanning 17,000+ square feet at Denargo Market in RiNo district. Features bar, patio, event space, turf field for lawn games, and heated tent structure. Operated by DrinkDenver with draft beer, wine, kombucha, cocktails and food trucks.
Carboy Winery and Angelo’s Taverna
Combined winery tasting room and Italian restaurant opening at former Old Chicago location. Will serve Italian dishes including pasta, pizzas, and fresh oysters. Opening coincides with Carboy’s 10th anniversary.
Tiki Bird
New restaurant by owners of Péche in Palisade. Currently undergoing major renovations including asbestos mitigation and structural improvements. Will have same quality as Péche but with a ‘fun’ concept.
Jersey Mike’s Subs
Jersey Mike’s Subs opening new 1,400 square foot location in Broomfield Marketplace, operating 10 AM to 9 PM daily with projected staff of 22 employees. Managed by franchise owner Steven Ashoori.
Dry Dock Pub
Dry Dock Brewing Company is opening a new pub location in the Wash Park area, taking over the former Pub on Pearl space. Will feature full bar, elevated pub fare, outdoor patio, live music, and more than a dozen taps pouring beers from both Dry Dock and Left Hand Brewing.
Snarf’s Sandwiches
Snarf’s Sandwiches is preparing to open a new location in east Denver. The 6,371 square foot space will undergo renovation with construction expected to begin mid-January and complete by mid-April. The location is listed as ‘coming soon’ on their website.
