Tuscany Italian Restaurant
Second location of Tuscany Italian Restaurant (first location in Fergus Falls, MN). Co-owned by Nexh Zeka and two cousins, originally from the Dallas, TX area. Menu includes lasagna, parmesan chicken, fettuccine, and lobster ravioli. Located at former site of A’BriTin Catering and Hospitality. Owner stated the restaurant will be open by end of May 2026.
YoYo Chicken
YoYo Chicken, a fried chicken and burger restaurant with locations in NY and NJ, is coming soon to the former Curiosi-Tea site on Commerce Drive in North Mankato, MN. Signs posted outside the location confirm the upcoming opening. No specific opening date has been announced yet.

Health food and smoothie cafe expanding with investment from Timberwolves player Rudy Gobert. Adding locations near North Loop and in Wayzata. Focuses on organic, health-conscious menu items including vegan protein bowls and organic egg burritos.
158-unit boutique hotel
158-unit boutique hotel in St. Paul’s Midway neighborhood near Allianz Field, part of United Village development. Expected to attract visitors to nearby colleges including Hamline, Macalester, St. Thomas, and University of Minnesota. Being developed by Snelling-Midway Redevelopment (SMR) with $170 million investment, constructed by Mortenson.
