Bally’s Las Vegas
Mixed-use casino resort project next to Athletics Las Vegas ballpark. Will include 1,800-room hotel tower in Phase 2, plus second 1,200-room tower in Phase 4 (3,000 total rooms), casino, retail and dining spaces, 2,500-seat theater, and parking. Total project cost $1.19 billion with phased construction through 2030.

Wagyu smash burger concept by Chef Sam Marvin of Echo & Rig, opening at AREA15 entertainment venue. Features full muscle grind wagyu patties, house-made fries fried in beef tallow, milkshakes and beer. Located next to Universal Horror Unleashed.
Istanbul Mediterranean
Second location of Istanbul Mediterranean, a family-owned Turkish restaurant offering authentic halal food. The downtown location will feature an expanded menu including Turkish breakfast, Turkish pizza, and traditional pastries, with a larger dining room and open kitchen.
Coffee and Bar
Mobile coffee cart specializing in espresso-based beverages by day and espresso cocktails by night, including signature espresso martinis and Sparkplug shots. Will operate at First Fridays, Farmer’s Markets, ball games, and available for private events. Uses Bristot Italian roasting coffee.

New fusion concept combining Mediterranean and Latin dishes, opening in downtown Las Vegas area near Centennial Hills and Charleston Heights
EDO Gastropub
EDO Gastropub is making a comeback after closing in September. The concept is set to reopen with American comfort food with global accents, including vegan, gluten-free, and vegetarian options. EDO Hospitality signed a lease for the space formerly occupied by DW Bistro.
The Hat
Southern California quick-service restaurant known for world-famous pastrami dip sandwiches expanding to Las Vegas market. Will be first location outside of California for the family-owned chain that started in 1951.
Nashville Cats Cafe
Nashville Cats Cocktail brand expanding to open a cafe on the Las Vegas Strip. Negotiations underway for undisclosed Strip location. Team planning to meet in February 2026 to discuss next steps. Will feature food and live music in a Texas-inspired immersive dining and entertainment experience.
China Mama
Contemporary Chinese fusion restaurant expanding with two new locations – Henderson location expected to open by summer (May or June), and Summerlin location at 2233 N. Rampart Blvd also planned for 2026. Brand has 6 existing locations in Las Vegas Valley.
Hard Rock Hotel & Casino Las Vegas
Guitar-shaped hotel tower with 675 rooms and suites as part of full transformation of former Mirage property. Will offer nearly 3,600 total hotel rooms, 175,000 sq ft gaming space, two spas, multiple pools, entertainment venues, restaurants and retail. Construction 28 of 42 stories complete.
