Elevated diner concept from culinary couple Matthew and Michelle Merrifield. Located at former McCarthy’s Restaurant/Skinny Pancake space. Serves elevated diner food for breakfast and dinner including doughnuts, patty melt, trout, ribeye for two, and whole branzino. Goal to open before July 4, 2026. Renovation underway since mid-April closing.

The Harborvale

161-room Autograph Collection (Marriott Bonvoy) boutique hotel on the shores of Lake Champlain. Burlington’s first Autograph Collection property. Expected to create ~100 jobs. Developed by Jay Canning and Chuck DesLauriers, owned by Burlington Harbor Hotel Group, operated by Westport Hospitality. Hans van Wees is managing director of Westport Hospitality.

161-room lakeside hotel on the shores of Lake Champlain, joining Marriott Bonvoy’s Autograph Collection. Developed by Jay Canning and Chuck DesLauriers, owned by Burlington Harbor Hotel Group, operated by Westport Hospitality. Features 3,000+ sq ft of event space with three event spaces, floor-to-ceiling windows, and lake-inspired interiors supporting gatherings up to 125 guests.

Red Hen Bakery and Cafe

European style bakery and cafe moving to Main Street location, will serve breads, pastries and lunch offerings with plans for performances in the 4,000 square-foot space

Red Hen Baking

Red Hen Baking is moving its cafe to downtown Montpelier at the former Rabble-Rouser location. The cafe will be slightly bigger with longer hours and will offer new creemee options. They also plan to open a new cafe at their Middlesex facility later in 2026.

Downtown Rutland Hotel

Seven-story hotel development with 100 rooms and 26 housing units planned for downtown Rutland’s vacant ‘pit’ site. Project has secured 80% of funding with $8 million state investment. Remediation work underway, expected to take 4-6 months. Will create 30 permanent hotel jobs.
