El Trombone

Gay bar opening in former Mutiny Tiki Bar space, operated by Detroit Optimist Society. Will feature classic cocktails, canned beers and seltzers, with DJ nights, drag shows, and karaoke. Interior design described as ‘hyperpop, leather daddy vibe’ with ’70s, ’80s aesthetic.

Skylight Books Eagle Rock

Skylight Books is opening a second location in Eagle Rock featuring a 6,000-square-foot space with a cafe and expanded book selection. The location will also have a beer and wine license. Construction is underway to convert the former restaurant space.

Homegrown Tap and Dough

Taproom and eatery expanding from Denver metro area to first Southern Colorado location. Offers hand-tossed pizzas, pasta, salads, burgers and craft beer. $1.2 million renovation underway at former José Muldoon’s location.

Zaxby’s

Zaxby’s fried chicken chain is expanding into Colorado with major plans for more than four dozen locations statewide, including 30 planned for the Denver Metro Area in the coming years. Specific locations and opening dates are still being determined.

Shake Shack

Northern Colorado’s first Shake Shack location in a 3,800-square-foot space near Foothills Mall. Goal is to open before CSU students leave for summer break. Signage is now up as of April 16, 2026.

Dutch Bros Coffee

New Dutch Bros Coffee drive-thru location under construction on East Kings Canyon Road near Clovis Avenue. Will include drive-thru for cars and walk-up window. Building next to former Javier’s Mexican Restaurant.

Del Taco

Del Taco plans to open its first Louisville location in Fern Creek, featuring a 2,000+ square foot space with patio and drive-thru. Part of a five-store development deal for Kentucky expansion.

Bloom Bar

Bloom Bar is moving from a weekend patio operation at The Boarding House to its own location, offering dinner service plus cafe/fast-casual morning service. Replacing the former Misogi Noodle Bar.

In-N-Out Burger

3,886 square-foot In-N-Out Burger with drive-thru coming to Town Center at The Preserve. Building can seat 74 customers with patio seating for 60 more and drive-thru accommodating 30 vehicles. Site has been graded and construction timeline is about 9 months once it begins.

DosBros Fresh Mexican Grill

Fast-casual Tex-Mex restaurant taking over former Arby’s location, offering customizable bowls, burritos, tacos, and salads with fresh, locally sourced ingredients
