Second location of MirĂ³ Spanish Grille expanding to SouthPark in a 4,000-square-foot space, formerly home to Fontana di Vino. Will offer 80% of the same menu as existing Ballantyne location including empanadas, paellas, and Spanish seafood dishes.

Summit Farms

62-acre farm-to-table village featuring organic farm, market, deli, wood-fired pizza restaurant, ice cream shop, Summit Coffee headquarters, and Silly Goose Bakeshop. Construction starts April 2026 with spring 2027 opening.

Raising Cane’s Chicken Fingers

Louisiana-based chicken finger chain planning first Triad location in Greensboro. Known for limited menu focused on chicken finger meals, crinkle-cut fries, Texas toast and signature dipping sauce. Location pending final city approvals and permitting.

Dutch Bros Coffee

Dutch Bros Coffee will open at former O’Charley’s location. Building permit issued March 31, 2026. Will be first location in Alamance County for the coffee chain.

Float Dirty Soda and Ice Cream

Retro dirty soda shop and ice cream concept from the team behind The Daily Grind in Burlington. Will feature vintage soda fountain atmosphere with modern dirty soda offerings, housemade syrups, complimentary popcorn, pretzel bites and cookies.

Insomnia Cookies

Philadelphia-based dessert chain Insomnia Cookies has filed a permit for a new Charlotte location. The brand is known for late night hours and offers cookies, brownies, ice cream and cookie cakes. This would be their 5th Charlotte location.

Kitchen Social

Columbus-based Kitchen Social planning first Charlotte location in Cotswold Village. 4,200-square-foot space with 1,000-square-foot patio, featuring indoor-outdoor bar, open kitchen, and spacious patio with firepits. Made-from-scratch menu with Indian, Asian, Mexican and Italian cuisine elements.
