Iowa-born convenience store chain with restaurant component coming to Austin. Known for handmade pizza and prepared food. Construction expected March 16 to September 16, 2026. Part of $4.4 million Texas expansion with 8 locations planned.

Crust Pizza Co.

Chicago-style thin crust pizza restaurant expanding to Bastrop location. Construction running from February 16 to May 18, 2026 with estimated cost of $565,000. Part of chain with 36 locations in Louisiana and Texas.

Toasted Yolk

Toasted Yolk breakfast and brunch restaurant filing permits for construction in Bastrop’s Sendero development. $865,000 construction project includes 811-square-foot patio. Will join other restaurants like Chuy’s, Texas Roadhouse, and Jersey Mike’s in the development.

Taqueria De Diez

Taqueria De Diez is opening a new location on Old 6th Street in Austin, replacing their current downtown location. The restaurant offers tacos with various proteins, quesadillas, burritos, and sides.

Buffalo Wild Wings

Buffalo Wild Wings converting former Fuddruckers location with $450,000 renovation project. Construction to start mid-April and wrap up by end of October, with opening expected fall 2026.

Gyro Hut

Mediterranean fast-casual restaurant featuring gyros, shawarma, and falafel. Corporate-run location part of Greater Houston expansion. Menu includes NY-style gyro meat, grilled proteins, and house-made sauces.

Luiza Coffee Shop

Family-run coffee shop opening first location in Greater Houston region. $200,000 construction project on 1600 sq ft space, construction starts March 2026. Will offer specialty coffee, espresso drinks, handcrafted lattes, teas, fresh baked goods, and light breakfast/brunch options.

Popeyes

New Popeyes location with construction slated to begin in May 2026 and expected completion by February 2027. Permit recently filed for the quick-service fried chicken restaurant.

Gyro Hut

Mediterranean restaurant chain expanding in Greater Houston area. Construction expected to start end of April 2026 and wrap up end of July 2026. Franchise operated by Bilal Syed. Menu features gyros, shawarma, falafel with NY-style gyro meat and house-made sauces.
