Iconic Seattle restaurant Bush Garden reopening inside Uncle Bob’s Place after closing in 2018. Will feature karaoke, traditional Japanese food, and community programming. Smaller space seating around 100 people.
Cafe Lolo
Seasonally dictated day and night cafe opening in Capitol Hill’s Loveless Building, featuring local grains-centered approach with fresh pasta. Will serve brunch/lunch Thu-Sun and dinner Fri-Mon. Counter service during day, sit-down dining at night.
Nebula Seattle
Immersive culinary theater company (formerly Cafe Nordo) opening in 22,000-square-foot historic Buttnick Building in Pioneer Square. $5 million renovation project with debut experience called ‘Nebula Seattle: A Cabinet of Dreams’. Hoping for partial opening during FIFA World Cup in June-July 2026.
Wingstop
Chicken wing chain restaurant planning new location in Bellingham. Building permit application filed Dec. 30, not yet approved as of Jan. 2. Would be Whatcom County’s only Wingstop location.
Bottega
Italian restaurant by former Ricardo’s owner Rick Nelsen, located on ground floor of office building facing Huntamer Park. Features garage-style doors that can open on warm days. Construction work has restarted after summer delays.
Loyal Legion
Beer hall and restaurant expanding to Vancouver, WA location at former Heathen Brewing Feral Public House. Known for supporting local breweries and serving shareables, burgers, sandwiches and bratwurst.
Bobby’s Burgers by Bobby Flay
Bobby’s Burgers by Bobby Flay expanding to first Washington location inside Muckleshoot Casino Resort. Will be the 11th location systemwide, marking the brand’s Pacific Northwest debut.
Thread Hunter Speakeasy
Secret speakeasy opening inside Thread Hunter thrift store in Ballard, serving local brews, cider, and non-alcoholic options. Will feature art wall showcasing local artists and host private events.
Von’s 1000 Spirits
Seattle-based bar and restaurant expanding to Kirkland location in former Feast space. Will occupy 3,300 square feet near downtown waterfront. Menu includes sourdough pizzas, pastas, hamburgers, and full spirits program. Construction begins January 2026.
The Langley Sidebar
Legal-themed craft cocktail and wine bar owned by Brad Bales (municipal court judge and former prosecutor) and Mara Bales (Adobe Director). Will feature small plates, legal-themed cocktails, marble-and-mahogany bar, and private event space.
