Iconic sub shop reopening after closing brick-and-mortar location in February. New location will be three times larger with lower rent, featuring a beer garden and arcade games. Currently operating as ghost kitchen via DoorDash.

The Hand & The Eye

36,000-square-foot magic mansion and restaurant experience located in the historic McCormick Mansion. Features 37 rooms with secret passageways, world-class magicians, and elevated dining program by Levy Restaurants. Tickets start at $225 including $75 dining credit.

The Chametz

Experiential fine dining restaurant offering prix fixe dinners ($220) on Fridays and Saturdays for up to 10 guests per seating. Seven-course menu with beverage pairings and transportation included. Worker-owned collective with on-site experimental farm.

Prime Sports Plus

New restaurant combining dining, games, and drinks opening in former Old Chicago location. Features 40 draft lines, bourbon selection, pool tables, dart boards, and plans for upstairs party room and catering services.

Chick-fil-A Runway 35 South

Colorado’s first drive-thru only Chick-fil-A prototype restaurant opening with drive-thru, carry-out, third-party delivery, Mobile Thru, walk-up window and outdoor patio seating. Operated by U.S. Army veteran Jason Sutton who also operates Chick-fil-A Quebec Street in Denver.

Chipotle Mexican Grill

New Chipotle location moving into former BurgerFi storefront in East Dallas M Streets/Lakewood area. Construction currently underway.

Doubles Club

Pickleball and bar/café concept opening in former Infinite Monkey Theorem space in RiNo. Features four pickleball courts, bar/café with drinks and grab-and-go items, and patio. Drop-in play for $15 up to 2 hours, with memberships and leagues planned.

Summit Farms

62-acre farm-to-table village featuring organic farm, market, deli, wood-fired pizza restaurant, ice cream shop, Summit Coffee headquarters, and Silly Goose Bakeshop. Construction starts April 2026 with spring 2027 opening.

Alchemist Public Market

Public market with shared commercial kitchen, cafe serving coffee/beer/wine, corner grocery store, and four rental pods for food entrepreneurs. Ground breaking occurred April 9, 2026.

Bread Zeppelin

Bread Zeppelin specializes in salads served in bowls or inside artisan baguettes. They toast baguettes, remove the soft insides, and stuff them with customized chopped salads including Caesar, buffalo chicken, and southwest varieties.
