Recess Beer Garden
Second location of popular LoHi bar opening in Virginia Village neighborhood at old Family Dollar location. Will feature 10,000 sq ft patio (double the size of original), shared with taqueria, pizza joint and bakery. More family-friendly concept than original location.
Bubba’s 33
Bubba’s 33, a Texas Roadhouse sister restaurant, is taking over a former Red Lobster location in Northfield, Colorado. Construction and transformation is currently underway with VMC Facilities LLC handling the project.
Homegrown Tap and Dough
Taproom and eatery expanding from Denver metro area to first Southern Colorado location. Offers hand-tossed pizzas, pasta, salads, burgers and craft beer. $1.2 million renovation underway at former José Muldoon’s location.
Zaxby’s
Zaxby’s fried chicken chain is expanding into Colorado with major plans for more than four dozen locations statewide, including 30 planned for the Denver Metro Area in the coming years. Specific locations and opening dates are still being determined.
Shake Shack
Northern Colorado’s first Shake Shack location in a 3,800-square-foot space near Foothills Mall. Goal is to open before CSU students leave for summer break. Signage is now up as of April 16, 2026.
1st Street Farms
15,000-square-foot restaurant serving Southern-inspired but Colorado-rooted cuisine, part of a $30 million dining and entertainment complex. Partnership between Peyton Manning and Gastamo Group. Project includes restaurant, event space, and community park.
River Mile Headwater Hotel
Hotel component of the River Mile development’s Headwater phase, planned to include 250,000 square feet of hotel space as part of a mixed-use development on the site of Elitch Gardens
