Ebisu Sushi and Ramen Star

Ebisu Sushi and Ramen Star is taking over the former Ramen Star space in Sunnyside. Owned by husband-and-wife team Myong and Chef Soon Choi, who previously operated at Junction Food & Drink since 2020. Will serve ramen and sushi with plans to expand menu with curry and gyoza.

Kona Grill

Kona Grill steak, seafood and sushi restaurant converting old Applebee’s location. Project is 27% complete with ongoing city reviews and permitting. Indoor renovations review scheduled for March 23, 2026.

The Blue Star

Mobile taco truck operating out of 13-foot aluminum Airstream trailer, serving simple menu with appetizer and handful of taco options inspired by South Texas and Mexico. Owner plans flashy launch on Cinco de Mayo and hopes to eventually open brick-and-mortar location.

Birdcall

Chicken sandwich chain opening location on mezzanine level of Coors Field, confirmed by CFO. Known for chicken sandwiches like Bee’s Knees with Calabrian chili aioli and Mike’s Hot Honey.

Josh and John’s Ice Cream

First-ever drive-thru location for Colorado Springs ice cream staple that has been operating since 1986. Located at former Dutch Brothers Coffee shop site near Voodoo Brewing.

Catbird Hotel

Catbird Hotel proposed by Norwood Development to be built off Moreno and Cascade Avenues near Mill Street neighborhood in downtown Colorado Springs. Urban renewal proposal approved by city council.

New coffee shop owned by husband-and-wife duo Armené and Tim Piper, replacing The Barking Dog cafe. Features Art Deco aesthetic with remodeled interior and reconfigured coffee bar layout. Owners emphasize community gathering space.
