14-seat Bombay-inspired Indian restaurant opening at the former Menlo Park Diner location on Route 1 in Edison, NJ. Owned by husband-and-wife team Nishiket and Shizani Parikh. Soft opening planned for late May 2026. Will initially serve dinner (5-11pm) and weekend brunch, with lunch service to be added later. Interior has been completely remodeled.
